I love this cookbook!! While the title might lead you to think that this is a vegetarian cookbook, it's not. There are occasional dishes with meat featured (like chicken soup). However, it IS a great primer on a lot of techniques and simple recipes for how to prepare vegetables in unique and different ways. For example, the roasted cauliflower recipe includes both top of the stove frying as well as in the oven roasting. The combination is easy and turns out beautifully. As others have indicated, the vegetables are organized alphabetically and there is a brief introduction before the 1-3 recipes for each vegetable. The beautiful photographs are integrated into each vegetable's section. A beautiful and useful book for picking up great ideas and techniques that can be expanded upon or are delicious just on their own.
